Amanda Swart is an Associate Professor in the Department of Biochemistry at Stellenbosch University. She teaches undergraduate courses while also managing her research program and her postgraduate students. Professor Swart has been investigating the influence of natural products on the adrenal cytochrome P450 enzymes (P450s) for a number of years. These enzymes catalyze the biosynthesis of steroid hormones – glucocorticoids (cortisol and corticosterone), mineralocorticoids (aldosterone) and adrenal androgens (androstenedione). She has devoted years to studying adrenal steroid hormone biosynthesis and the structure/function aspects of the P450s, using the baboon enzymes as her model system, linking these to the human P450s for comparative analyses.
Running alongside her interest in steroid hormones is her interest in natural plant products. The P450s are enzymes ideally suited to studies investigating the bioactivity of plant extracts and secondary plant metabolites. Coleen is a Functional Nutritionist and Master Nutrition Therapist. Catherine M. Pittman, Ph.D., HSPP, is a licensed clinical psychologist, psychology professor, and chair of the Psychology Department at Saint Mary’s College in Notre Dame, Indiana. Before moving to Connecticut, Dr. Parsons maintained a multi-doctor practice of chiropractic, clinical nutrition and natural-medicine in Houston, Texas for 7 years. She lectures throughout the United States and Canada on clinical nutrition, women’s health issues, and the management of soft-tissue disorders. Previously, Dr. Parsons was in practice at a multi-disciplinary integrated medical practice in Milford, Connecticut where she specialized in women’s health and functional medicine.

Julia Rucklidge PhD, is a Professor of Clinical Psychology in the Department of Psychology at the University of Canterbury, Christchurch, New Zealand. Originally from Toronto, Canada, she did her undergraduate training in neurobiology at McGill University in Montreal. She then completed a Master’s and PhD at the University of Calgary in clinical psychology where she studied the psychological profiles of women with ADHD. She went on to the Hospital for Sick Children in Toronto to complete a two year post-doctoral fellowship investigating gender differences in ADHD adolescents. In 2000, she and her husband moved to Christchurch, New Zealand where she secured a position at the University of Canterbury in the Department of Psychology. She teaches child and family psychology in the Clinical Psychology Programme and more recently, has introduced the topic of Mental Health and Nutrition into the wider psychology programme. Her interests in nutrition and mental illness grew out of her own research showing poor outcomes for children with significant psychiatric illness despite receiving conventional treatments for their conditions. In the last decade, she has been running clinical trials investigating the role of broad-spectrum micronutrients in the expression of mental illness, specifically ADHD, Bipolar Disorder, anxiety and more recently, stress and PTSD associated with the Canterbury earthquakes. She is also studying the effect of probiotics on depression.
